This course offers the opportunity to explore modern bakery techniques using SOSA ingredients, with a focus on flavour innovation, texture, and creative presentation.

 

Under Chef Mampel’s expert guidance, you’ll work through a range of contemporary bakery recipes — from sweet bao and flaky churros to signature viennoiserie and filled breads — designed to inspire and elevate your baking repertoire.

Please note this is a Level 2 course – Designed for professionals and experienced bakers, this level helps you build on core skills while introducing advanced techniques and ingredient applications.
