Led by Circle Wong, renowned pastry chef and “Dessert of the Year” winner (The Association of Pastry Chefs, UK), and current trainer at L’École Valrhona. Raised in Hong Kong and shaped by both Asian and European culinary traditions, Circle brings a unique and contemporary vision to fine pastry.

This course is tailored for HORECA chefs seeking to elevate their dessert offerings with elegant, East-meets-West creations. You’ll work with premium Valrhona chocolate couvertures, Absolu Cristal, and SOSA ingredients to craft sophisticated plated desserts that balance innovation and technical excellence.

Please note this is a Level 2 course – suited for chefs with an intermediate to advanced skill level, this class will challenge and inspire you while providing practical, adaptable techniques for various kitchen setups.
